| DESCRIPTION: The author of 8 books on bread, Peter Reinhart treats his subject as both food and metaphor. The focus of this class is his latest book, "Peter Reinhart's Artisan Breads Everyday," released in the fall of 2009. Reinhart’s previous books have garnered four James Beard Awards, including the 2002 Book of the Year for "The Bread Baker's Apprentice." A faculty member at Johnson & Wales University, Reinhart currently lives in Charlotte, North Carolina. Peter will demonstrate preparation and treatment of four different doughs, along with many variations. These doughs utilize the new delayed fermentation techniques he developed for his most recent book. Doughs include European-style lean hearth breads, golden challah, chocolate babka, and sweet dough (which will serve as the base for sticky buns, crumb cake, and fruit-fill thumb-print rolls). While utilizing totally new techniques, this simple method is perfect for bakers of all skill levels, even beginners. NTI welcomes Peter for his first teaching appearance in Reno. |
